
Oatmeal Pancakes

We served these for Sunday breakfast at Roostercomb #1 and they were very well received. They are simple to prepare, and worlds ahead of any mix. They are terrific with butter and syrup, or give raspberries and sour cream a try. Delicious!

2 cups quick oats
1/2 t. baking soda
2 1/2 cups buttermilk
1 cup flour
2 t. baking powder
1 t. salt
1 T. sugar
1/3 cup salad oil
2 eggs, beaten
Combine oats, soda and buttermilk. Let stand 5 minutes. In another bowl, combine flour, baking powder, salt, and sugar. Combine oat mixture, oil, and eggs. Add dry ingredients and stir 'till blended. Cook on a lightly greased griddle or skillet. Yields 14 - 16 pancakes.
