
Grilled Sea Bass with Avocado Sauce

Sea bass is a delightful, light-textured fish that takes well to grilling. The avocado sauce here has a delicate but spicy flavor that is delicious on fish and seafood of all kinds.

4 sea bass steaks (about 1/2 pound each)
1 Tbsp. salt
2 Tbsp. lime juice
1 tsp. lemon pepper
Sprinkle the fish steaks with lime juice, salt and lemon pepper. Let the steaks sit for up to an hour at room temperature.
Prepare the grill for direct grilling. Spray or rub the grill with oil.
Grill the steaks for 3 minutes over high heat. Turn and cook for another 2 to 3 minutes until done. The fish should be flaky but still juicy.
Do not overcook.
1/2-1 jalape–o chile, seeded and minced
2 cloves garlic
1/2 chopped cilantro
1 tsp. salt
1 ripe avocado
1/2 cup water
1 Tbsp. lime juice
2 Tbsp. sour cream
Add all sauce ingredients except the sour cream to a food processor or blender. Process until smooth. Stir in the sour cream. Spoon the sauce over the fish before serving. Garnish with lime slices.
